Doug's sister, Emily, made her famous Buffalo Chicken Dip for her brother's graduation a few weeks ago. I tried to snap a picture of that dip, but the lighting was all funky, so I didn't get a good picture until now. Taylor brought over cowboy caviar and a delicious buffalo chicken dip last weekend. This picture is actually a picture I took of Taylor's dip, so if you want her recipe, then click here. The recipe I posted below is Emily's recipe. Both are delicious - your guests will love it either way!
(Emily's Recipe)
Yield: Serves Many
2 Packages Cream Cheese (reduced fat)
2 C. Ranch Dressing (Fat Free)
2 Bags (2-cup size) Shredded Cheddar Cheese
Celery, diced (to taste)
3/4 C. Buffalo Wing Sauce (more or less to taste)
6-8 Boneless Chicken Breasts, cooked & shredded
In a large bowl, mix (with beater) cream cheese, dressings, celery, cheese, squirts of buffalo wing sauce. Add chicken; stir all together. Put in a 9x13'' pan. Add more cheese on top. Bake at 375F degrees for 20-40 minutes (until top is golden brown). Serve with pita chips, tortilla chips, and celery sticks.

That is the BEST dip! My boyfriend and I have been known to make it for a meal :o)
ReplyDeleteErin, that is too funny! I'm not sure if I could make it a complete meal.... but it sure is tasty! Have a great weekend :)
ReplyDeleteI had forgotton all about this. I first tried it at a clambake party in Cleveland and the gal who brought it was actually FROM Buffalo. She acutally recommended using canned white chicken breast, omitted the Ranch and would sprinkle the top with bleu cheese crumbles. Her number one tip was to NEVER substitute hot sauce (like Tabasco) for the wing sauce. So delicious! Thanks!
ReplyDeleteCrumbled bleu cheese sounds like a great addition, Melissa. I will give that a try next time! You can also substitute fat free bleu cheese dressing for the ranch dressing. Taylor uses canned chicken in her recipe (great for a quick-fix), but I like the taste of shredded, cooked chicken in this one!
ReplyDeleteThx for the shout-out! I love this dip because it's low-fat and it fills you up! And if you want to take it a step further, eat it was baked chips!
ReplyDeleteEmily, THANK YOU for the recipe!
ReplyDeleteGoodness I love buffalo wing dip. I think I could honestly live on wings alone!
ReplyDeleteAnd ps - my mother has been reading your blog & loves it! I think she likes that you are an Omahan the most, & has commented that all your recipes & food look beautiful!
Piper - Thanks so much for the nice comment! AND HELLO TO PIPER'S MOM! :)
ReplyDeleteDear, you always have the best recipes!! I swear, I think I've printed almost every single one of them! And for this particular one, love the fact that you're using low fat ingredients!
ReplyDeleteJen, honestly you can't even tell that Emily used low-fat ingredients! You'll love this recipe! I'm so glad that you are using the "print" button!
ReplyDeletei cannot be trusted around this stuff! my friend does half ranch dressing half blue cheese dressing and makes it in a crockpot so that it can stay warm throughout the party...not that it lasts that long. YUM :)
ReplyDeleteI haven't made this, but I have tried it and it's delicious!
ReplyDeleteI loved this at Paul's party, and I truly think you need to think about making a cookbook for all of us followers!
ReplyDeleteThis is one of my favorite dips ever. Funny story - my friend once made it, and used the wrong size or heat of sauce, and it was EXTRA spicy - still delicious - my boyfriend ate practically the entire thing and his poor stomach afterwards...he was scarred! xxSAS
ReplyDeleteSarah - Oooh your poor bf! I hope that you'll give this recipe a try and maybe you'll have some better luck!
